This organic pasta flour is just the endosperm of the durum berry with a fancy name. Or you can think of it as Semolina milled down to a fine flour granulation.
The fine granulation makes absorption consistent and your pasta silky smooth and the high protein / high gluten content makes it the perfect choice for eggless pasta and certain artisan bread formulas. Like with pasta, in your bread formulas, Extra Fancy Durum organic pasta flour hydrates consistently and tends to be thirstier so you can bump your hydration which will open up your crumb.
Durum wheat also has some interesting health properties. Compared to regular wheat, it’s higher in folate, lutein and fiber, and has a lower glycemic index. Simply put, this flour lives up to its name!

All orders placed on Orson H. Gygi Company (Gygi.com) are shipped via FedEx and USPS to ensure fast and reliable delivery service. Standard shipping rates are calculated based on the destination location and the packed weight of the order. All orders will be processed on the next business day.
In the event that we are out of stock on an item we will contact you via email or text to the address or phone on the order. If we do not get a response within one business day we will send the order minus the out of stock items and credit the cost of the item(s) and shipping of that item. Once an order ships we will send tracking information to the customer to ensure the order is able to be tracked. The tracking information will be sent to the email address on the order.
